Chef Scott Crawford doubles up his pairings in honor of his favorite artist, the late Chris Cornell.

“I would like honor one of my favorite musicians, if not the favorite musician of my time, and that’s Chris Cornell. Chris Cornell recently passed away and I just haven’t stopped listening to his music. I went back and just basically revisited everything he’s ever written. What I’ve found is this sort of parallel. He had Soundgarden and he had Chris Cornell. I have these heavier in your face dishes and then I have the more almost lighter, delicate, more composed dishes. I’d like to pair a recent dish, this dish is a Sous Vie Short Rib with a Hoisin Glaze and a Peanut Crust and Miso Sweet Potatoes. These are very umami flavors, very bold, very savory, with just a hint of an Asian edge. I would pair that with “Outshine” by Soundgarden. If you wanted to talk about my more delicate side, I think I would pair this lightly smoked Yellowtail Crudo with Green Apple, Yuzu Kosho,and Crispy Rice. I would pair that with the acoustic version of Chris Cornell covering Prince’s “Nothing Compares 2 U.”
